PRESERVATION OF FOOD

INTRODUCTION 

A critical process which prevents the spoilage,poisoning and contamination of food by microorganisms is known as preservation of food. It involves several techniques in maintaing the quality,texture,flavor and nutritional value of food products. From centuries, this method is followed,just the difference lies in the techniques used,earlier drying,smoking and salting methods were used but today methods such as canning,freezing,pasteurizartion and irradiation are used.
The process of preserving the food holds an utmost importance as it provides us with many benefits such as:
> The techniques of preservation increases the shelf life of the food making it available for a longer period of time.
> The preservation methods prevents the poisoning and contamination of food by the microorganisms. 
> The techniques of preservation maintains the quality and nutritional value of the product thus our health and well-being are not compromised due to the preservation techniques.
> The methods of preservation ensures the availability of food throughout the year despite any seasonal variations.
It is essential to understand the methods of food preservation so that by applying different techniques, an individual can enjoy a wide range of product anytime,anywhere without compromising its quality or nutritional value.

METHODS OF FOOD PRESERVATION 

The preservation of food is an essential process if we want to maintain the quality,texture, flavor and nutritional value of the food. This can be achieved by the following methods:
●PHYSICAL METHODS
Some of the physical methods are as follows:
•Drying/Dehydration:  Moisture is removed from the food to prevent the growth of microbes. For example: sun-drying,mechanical drying and freeze-drying.
•Freezing: Water activity in the food is lowered due to freezing which inhibits the growth of microbes. For example:air-freezing,plate freezing and cryogenic freezing.
•Canning: This process involves sealing food in airtight containers and heating them to destroy the microorganisms. 
•Pasteurizartion : It is a mild heat treatment which kills pathogenic microorganisms. For example: VAT,HTST and UHT pasteurizartion. 
•Irradiation : In this process the food is exposed to ionizing radiation which kill the microorganisms thereby extending its shelf life.

●CHEMICAL METHODS
Some of the chemical methods are as follows:
•Salting: In this method,high salt concentration is used to dehydrat the food which prevents the growth of microbes. For example: preserving meat and fish by applying salt on them.
•Sugaring: In this method, sugary substances are added to reduce the content of moisture and prevent microbial growth. For example: Preserving fruits such as cranberries and apricots.
•Chemical Preservatives: This process includes benzoates,sulfites and nitrites are used to prevent the microbial growth.
●OTHER METHODS 
There are some of the other methods also which can be used to preserve the food. They are as follows:
•Fermentation : It involves microorganisms which convert sugars into acids or gases thus preserving the food. For example: yogurt, cheese and sauerkraut. 
•Vaccum Packaging: In this process,air is removed from packaging to prevent microbial growth and extend the shelf life.
•Smoking: In this process,food is preserved by dehydration and antimicrobial growth in the presence of smoke. For example:meat and fish are smoked for preserving. 
•Biopreservation: In this process,for inhibiting the harmful microbes preservation is done by utilizing the naturally occurring bacteria and their by-products.
•High-pressure processing : In this method,high pressure is used to kill the microorganisms which extends the shelf life of the food.
•Modified atmosphere packaging: In this method,gaseous environment around the food is changed which inhibits the growth of microbes.

APPLICATIONS OF FOOD PRESERVATION 

The techniques of preserving the food are used by different industries for various reasons. The applications of food preservation in various industries are as follows:
●Food Processing Industry 
The processes applied in this industry are as follows:
•Canning: Food products such as fruits,vegetables and meats are preserved.
•Freezing: Food products such as meat,seafood and prepared meals are preserved. 
•Dehydration : Food products such as herbs,fruits and vegetables are preserved
●Dairy industry
The processes applied in this industry are as follows:
•Pasteurizartion : In this process,pathogenic microorganisms are killed in milk and other dairy products. 
•Ultra-high Temperature Processing (UHT): This process extends the shelf life of milk and other dairy products. 
●Meat and Poultry Industry
The processes applied in this industry are as follows:
•Curing: In this process,meats like bacon and ham are preserved by using salt and other ingredients. 
•Smoking: In this process, meat and fish are preserved in the presence of smoke.
•Vacuum Packaging : The shelf life of meat and poultry products are extended by this process.
●Beverage Industry 
The processes applied in this industry are as follows:
•Pasteurizartion: In beverages like juices and milk,microorganisms are killed by this process. 
•Sterilization : All the availabile microorganisms are killed which are present in juices and milk.
●Pharmaceutical and Nutraceutical Industries 
The processes applied in this industry are as follows:
•Preservation of ingredients : The ingredients which are used in pharmaceutical and nutraceutical products are preserved. 
•Stability Testing: This process ensures the stability and shelf life of the pharmaceutical and nutraceutical products.
●Food Service and Hospitality Industry 
The processes applied in this industry are as follows:
•Food storage: Food products are preserved during storage and transportation. 
•Food preparation : This process preserves food products during preparation and serving.
●Home and Consumer Industry 
The processes applied in this industry are as follows:
•Food preservation at home: People use various preservation methods such as canning,freezing and dehydrating the product to increase it's shelf life.
•Food storage : People store food products safely to prevent spoilage and contamination from the microorganisms.
